The story behind the blog
Hi, I'm the woman who refuses to eat sad salads
Gluten-free traveler, relentless foodie, and proof that dietary restrictions don't have to mean boring meals.

How it all started
I was diagnosed with celiac disease in my late twenties — right in the middle of a trip to Italy. Of all the places to find out you can't eat pasta, right? I sat in a tiny trattoria in Florence, watching everyone around me twirl their tagliatelle, and made a decision: I was not going to let this define my travels or my relationship with food.
What started as a personal journal of "places I can actually eat" turned into something bigger. I started documenting every gluten-free gem I found — the hole-in-the-wall taco stand in Mexico City, the dedicated GF bakery in Paris, the izakaya in Tokyo that went out of its way to accommodate me. The world is full of incredible food, and most of it doesn't involve gluten.
No Salads Unscripted was born from that frustration and that joy — the frustration of being handed a sad iceberg salad as the only "safe" option, and the joy of discovering that the best meals of my life were still ahead of me.
